I’d like to be able to add additional projects and tags to multiple subtasks in the same manner as I can assign and add due dates.

You might already be doing this, but a workaround is to create regular tasks, add them to projects and add your tags as normal, then drag them individually into the main task as subtasks. It’s not as direct, but it works.
